Eric Lyon’s Secret Steak Marinade Recipe Revealed
You read the title correctly. I’m actually releasing my mouth watering top secret steak recipe into the wild for others to enjoy today.
If you have eaten one of my delicious steaks before, then you already know how priceless this recipe is and how much of a hit it can be at any get-together with a BBQ grill.
Generally, I like to marinade for 24 hours, however, I find that the flavor really bursts in the juices when you soak them for 48 hours and then use the leftover marinade as a baste each time you flip them on the grill. It’s usually best to make a little extra marinade ensuring that you do have some for basting.
Step #1: Tenderizing
- It’s very important to tenderize your steaks first. Get some plastic wrap and put it on your counter top. Make sure you have a long enough sheet to fold over your steak.
- Grab your steak and place it on the plastic wrap. Sprinkle salt and black pepper over your steak and cover with the extra plastic wrap. Now take your tenderizing mallet (or other heavy utensil) and beat that steak flat.
- Flip the steak over and repeat (B)
- Place steak in a deep baking pan or pyrex casserole dish.
- Repeat (A) thru (D) until all steaks are in the pan/dish.
Step #2: Marinade
Mix the following ingredients into a large mixing bowl.
- 1 cup olive oil
- 1 cup balsamic vinegar
- 1 cup Worcestershire sauce
- 1 cup soy sauce
- 8 table spoons spicy mustard
- 1 whole red onion (minced)
- 5 cloves fresh garlic (Minced)
Step #3: Spreading the flavors
- Now, take all your steaks out of the pan/dish and stack them on your plastic wrap.
- One at a time, baste both sides of each steak and place them back in the pan/dish.
- Make sure all the steaks look evenly coated.
- Seal the pan/dish with foil or the pyrex lid.
- Place in your fridge and let sit 24 to 48 hours.
- Put your leftover marinade in a sealed container and put it in the fridge for later.
Step #4: Time to grill
- Get your grill fired up and ready!
- Pull your steaks and extra marinade out of the fridge.
- When your grill is ready, slap those steaks on there and give them a nice basting of some marinate.
- Flip steak after 5 minutes and baste it again with the marinade. (Med. Rare steak is 5 min. each side or till it’s internal temp. is 150 F degrees)
- If you need your steak cooked longer than med. rare, make sure you remember to baste it every time you flip it.
- Note: Don’t forget, steak cooks itself for another 5 minutes after you take it off the grill to rest.
Step #5: Dig into that juicy deliciousness
That’s right, it’s time to enjoy the fruits of your labor. Or, in this case, some mouth watering juicy steak. Your friends, family, and guests are going to love you the next time you BBQ and serve these bad boys.

It’s definitely worth a try. You won’t regret this marinade and base. Just be sure to have extra so you can base the steak each time you flip them. It helps lock in the juices and keep the tenderness. (yummy)
